1. | Boil the tomatoes. Strain them and let cool until you are able to touch them; then peel them and place in blender. |
2. | Add the remaining ingredients to blender (cream, basil, chicken stock and tomato paste). Blend until there are no more lumps or pieces of tomato. |
3. | Pour the soup into a pot and bring to the boil to a slow heat (the red color should change to a darker one). |
