Seasoned Tomato Soup

A lovely soup during a cold night.

Ingredients

Directions

1. In a large pot add the olive oil and bring to medium heat. Chop onion and garlic.
2. Add to pot and sauté in olive oil. Add the basil, oregano, or any Italian spice mix to the pot and mix.
3. After onion and garlic is sauteéd for about 5 minutes add tomatoes and chicken broth to the pot. Add salt and pepper.
4. Bring to a boil for about 15 minutes. Turn off the stove and let it cool for about 5 minutes.
5. After the soup has cooled for a bit, put into a blender or blend (in the pot) with a handmixer till smooth.
6. Put it back in the pot if you used a blender. Add soy milk if you like it creamy.
7. Reheat soup till hot and serve.
8. Note: my son loves this and would suggest his mommy's turkey bacon BLT sandwiches as an accompaniment.
