1. | Preheat oven to 350 °F (175 °C). |
2. | Peel and slice sweet potatoes into thin rounds. Slice red pepper. Peel and thinly slice onion. |
3. | Melt butter in a 12" non-stick skillet. Add onions, peppers, sausage, sweet potatoes and chives. Cook down for 10 minutes. |
