Heat the olive oil on the stove top in a pan large enough for the meat. |

Add half the onion and all of the garlic to the hot oil. Let simmer for a few minutes until the onions become clear. |

Add the ground meat and cook until brown. Season with salt and pepper. |

Dice and slice tomatoes, potatoes, mushrooms and any other vegetables you may have lying around the fridge. |

In either a crock pot or large stove top pot add the tomato sauce, beans and vegetables (including the remaining onion). Add a jalapeno or haberno pepper for spice if preferred. Season with salt, pepper, oregano and red pepper flakes. |

Add all ingredients to the pot. Heat until it is boiling then reduce to low. |

Chili is done when the potatoes are cooked, usually 45-60 minutes stirring every 10 minutes. Enjoy! |

Note: can use lean ground beef instead and can be made in an all day crock or on the stove top. |
