Wash and slice potatoes into 1/4" slices. |

Spray non-stick skillet with cooking spray like Pam, and pre-heat briefly. Do not allow to brown or smoke, just a few seconds. |

Place potatoes and onion in pan, add salt and pepper, spray top lightly with cooking spray and cover with lid. |

Cook on medium to medium-low heat until browned and turn potatoes. |

Cook 5 minutes longer to brown slightly then add water, replace lid and continue to cook until potatoes are tender and water is evaporated. |

Spray with buttery spray and serve. |

Note: green peppers are also good with this recipe. |
