Directions

1. Preheat oven 350°F and spray 8”x8” baking dish with cooking spray.
2. Put olive oil in a large skillet over medium high heat.
3. Add diced sweet potatoes and water. Cook for 6-8 minutes or until the water evaporates, then add onions and bell peppers.
4. Cook for 5 minutes until vegetables are soft. Remove from heat and set aside.
5. Whisk together milk, eggs, and spices.
6. Fold in cooked vegetables and drained diced tomatoes.
7. Pour egg mixture into the baking dish and cook for 45-50 minutes or until the egg has set in the middle.
8. Slice into squares and serve warm or hot.
