Directions

1. Cook bacon, set aside. Grate zucchini.
2. Sauté onions in oil, add shredded zucchini and spinach and cook until wilted. Pour into 8" pan.
3. Mix eggs, egg whites, salt, pepper, and hot sauce and pour over vegetable mixture.
4. Crumble bacon and sprinkle over entire pan.
5. Cook for 40 minutes at 350 °F (175 °C).
