  1. Pour two cups apple juice into a large bowl.
  2. Squeeze canned tomatoes until almost dry; add to bowl.
  3. Add wine (optional).
  4. Add tilapia.
  5. Salt and pepper to taste.
  6. Allow to marinate.
  7. Bake in oven on 375 °F (190 °C) or grill until fish is white and flaky.
