Tomato Dill Shrimp Stew
Tomato based shrimp stew with a bit of a kick.
4 oz fat free feta cheese
2 tsp Dijon mustard
16 oz cooked shrimp
1 cup minced fresh dill
4 cloves garlic
1 large onion
1 cup fresh minced parsley
3 cups chopped or sliced tomato
1 tbsp honey
8 oz tomato sauce
Sauté onion and garlic for 5 minutes.
Stir in tomatoes, tomato sauce, dill, mustard and honey.
Bring to a boil. Reduce heat; simmer, uncovered for 20 minutes.
Add shrimp, feta cheese and parsley and simmer for five more minutes.
