  1. Pre-heat oven to 410 °F (210 °C).
  2. Prepare pie crust (pre-bake if necessary).
  3. Slice tomatoes thinly, as well as cheese. Wash and chop thyme.
  4. Place tomatoes, cheese, and thyme on crust, drizzle with olive oil. Season with salt and pepper to taste.
  5. Bake for 30 minutes. Cool slightly and serve.
