Sweet and Sour Cabbage Soup
Delicious vegetarian and vegan friendly cabbage soup.
1 tsp crumbled bay leaf
1 tsp caraway
3 tbsps balsamic vinegar
1 tbsp peanut oil
1/2 <span class="measurestring" title="head, medium (about 5-3/4" dia)">head medium</span> cabbage
1 medium carrot
1 small onion
510 g tomatoes
5 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
9 tsps sugar
Slice the onion into semi rings, shred the cabbage and grate the carrot. Sauté onion, carrot and cabbage in oil till all are very soft.
Add chopped tomatoes and juice from the can.
Add caraway, salt to taste, bay leaf, and water (about 5-6 cups).
Cook till cabbage is very, very soft.
Stir in balsamic vinegar and sugar very well.
Serve with bread, sour cream or by itself.
