Sweet and Sour Cabbage Soup
Delicious vegetarian and vegan friendly cabbage soup.
||Slice the onion into semi rings, shred the cabbage and grate the carrot. Sauté onion, carrot and cabbage in oil till all are very soft.
||Add chopped tomatoes and juice from the can.
||Add caraway, salt to taste, bay leaf, and water (about 5-6 cups).
||Cook till cabbage is very, very soft.
||Stir in balsamic vinegar and sugar very well.
||Serve with bread, sour cream or by itself.
