Stuffed Pepper Soup II
A quick and easy soup done in a crockpot.
3 cups beef broth
1 3/4 cups tomato sauce
96% lean ground beef
1 1/4 cups diced tomatoes & green chilies
2 tsps minced garlic
2 cups brown rice
1/2 cup young green onions, chopped
1/2 tsp ground oregano
1/2 tbsp basil
3 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> bell peppers
Brown the ground beef in a skillet.
Place all ingredients in a crockpot and cook for approximately 6 hours on low.
Note: use yellow, red and orange bell peppers to make the soup more colorful.
