Spinach and Leek White Bean Soup with Ham
Easy to make, delicious and filling soup, that can be made vegetarian with a few substitutions.
||Heat olive oil in a large saucepan over medium heat.
||Add the leeks and garlic. Sauté until tender.
||Stir in the chicken broth, cannellini beans, turkey ham and cumin.
||Bring to a boil, then reduce heat to low.
||Stir in the couscous. Cover and simmer for 5 minutes.
||Stir in spinach and season with salt and pepper.
