Spicy Chicken Tacos
Low fat Tex-Mex, hard to believe, but true.
3 breasts, bone and skin removed chicken breast
1 tsp fajita seasoning
1 lime yields lime juice
1 tbsp olive oil
8 <span class="measurestring" title="medium (approx 5" dia)">medium</span> tacos
1/2 head romaine lettuce, shredded
2 tbsps tomato salsa
2 tbsps mayonnaise, extra light
1/2 tsp pepper sauce
Cut the chicken into strips.
Toss the chicken with the fajita seasoning and heat the oil in a non-stick frying pan.
Add the chicken and stir fry for 10 minutes. Add the lime juice.
Fill the taco shells with the chicken, lettuce and salsa and top with the mayonnaise mixed with the pepper sauce.
