Spiced Chicken Couscous with Vegetables
Very fast food that's delicious and very healthy.
||Combine the spice and sugar, add the chicken and toss until well coated.
||Spray a non-stick frying pan lightly with oil and when hot, add the chicken. Stir-fry over medium-high heat for 5-8 minutes or until golden brown and cooked through.
||Stir in the chicken stock, beans and courgette and bubble gently for 1-2 minutes.
||Meanwhile, put the couscous into a small saucepan and pour the hot vegetable stock over. Stir and heat gently until the stock has been absorbed.
||Serve the chicken on the couscous with the lemon wedge to squeeze over.
