Spanish Style Chicken and Rice
Healthy makeover of a delicious one-pot dish.
1 medium yellow onion
1/4 tsp sazon powder
2 tbsps light sour cream
3 medium skinless chicken breasts
2 tbsps olive oil
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> green pepper
2 cups brown rice
1 cup tomato sauce
Prepare rice as directed. Sauté onion and green pepper in olive oil until tender.
Chop chicken breasts into bite-sized pieces and then add to green pepper and onion. Cook until done.
Add 1 packet of Sazón seasoning (found in the ethnic foods isle). Stir in rice and tomato sauce and allow to warm through.
Top with diced avocado and sour cream. Enjoy!
