1. | Cook squash in oven until soft. Remove from oven and use fork to make "spaghetti". |
2. | While squash is cooking in the oven, puree tomatoes. Then put into medium sauce pan with fennel and heat on low for about 20 minutes. |
3. | In a non-stick skillet, sauté garlic, onions and mushrooms until onions are soft. Then add ground turkey and coriander and cook thoroughly. |
4. | Add the ground turkey mixture to the tomato sauce pan and let simmer for another 4-5 minutes. |
5. | Put "spaghetti" on plate and pour sauce on top. |
