Southern Fried Squash
A slimmed down version of southern style fried yellow squash.
1 second olive oil cooking spray
4 cups sliced squash
1/4 tsp pepper
1/4 tsp salt
1/4 cup cornmeal
Place iron skillet on stove and get pan hot.
Wash and rinse squash. Slice squash in rounds, as thick as you like.
Place in a gallon Ziploc bag. Add salt, pepper, and olive oil spray to slightly coat.
Add cornmeal and shake the bag, coating the squash.
Pour into hot skillet. Cook, flipping the squash occasionally, until squash is browned and cooked down.
