Shrimp with Zucchini
This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta.
2 tbsps olive oil
4 cloves garlic
1/2 cup pieces or slices fresh mushrooms
1/2 cup chopped onion
2 medium zucchini
15 medium shrimp
1/4 cup grated parmesean cheese
Heat olive oil in fry pan.
Add chopped onion and minced garlic cloves. Cook until softened.
Peel zucchini and slice lenghwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
Top with cheese and serve with green salad.
Note: great for Phase 2 and 3 of South Beach.
