Shrimp Fra Diavolo
A tasty, healthy and low calorie seafood dish.
16 oz shrimp
14 1/2 oz tomatoes
1 tbsp leaves basil
1/4 tsp ground dried oregano
1 tbsp parsley
1 tsp pepper
1 tsp red pepper flakes
1 tsp salt
2 tbsps olive oil
1 <span class="measurestring" title="cup (8 fl oz)">cup</span> chicken broth
3 cloves garlic
1 large onion, sliced
Toss shrimp with salt, pepper and pepper flakes.
Heat the olive oil in a skillet, add shrimp and sauté until just cooked through (2-4 minutes). Transfer cooked shrimp to a bowl.
Add onion to skillet, sauté until translucent (4-5 minutes).
Add tomato (with juices), chicken broth, garlic and oregano. Simmer until the sauce starts to thicken (8-12 minutes).
Return shrimp and any juices that have accumulated in the bowl to the skillet/sauce. Toss and cook for about 2 minutes. Stir in basil and parsley.
Serve and enjoy.
