Pumpkin Pear Soup
A perfect pick-me-up lunch that's healthy, easy to make and ready in 30 minutes.
2 tbsps olive oil
1 small onion, chopped
1/2 cup minced fresh ginger
3 <span class="measurestring" title="pear, medium (approx 2-1/2 per lb)">medium</span> pears, peeled, cored and sliced thin
2 cups pumpkin puree
1/4 tbsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
4 cups 99% fat free chicken broth
Put first four ingredients in a large soup pot and sauté until tender, about 10 minutes.
Stir in remaining ingredients and bring to a boil, then reduce heat and simmer for 20 minutes.
Puree in batches in a blender or use a stick blender to blend until soup is smooth.
