Prawn with Green Peppercorns
This recipe seems like a sophisticated seafood dish and in the mind of your guests it will be but it's pretty easy to handle.
||Sauté the shallots in olive oil in a large saucepan.
||Add white wine and simmer for 3 minutes.
||Add the prawns and cook over a high heat for 5 minutes.
||Remove the prawns and set them aside.
||Add peppercorns to the cooking sauce and reduce in volume by half. Reduce the heat and add crème fraîche, cooking for 2 minutes.
||Peel the prawns, removing the head. Add the prawn tails to hte sauce.
||Heat gently for 3 minutes before serving.
