Potato & Carrot Soup
A quick and easy vegetable soup that pairs beautifully with warm crusty bread.
1/2 tbsp vegetable oil
1/2 tsp ground mixed herbs
2 low sodium bouillon cubes
2 medium carrots
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion
4 <span class="measurestring" title="potato medium (2-1/4" to 3-1/4" dia)">medium</span> potatoes
33 fl oz water
Cut up the onion and fry in the oil until brown.
Add the water and stock cubes. Add the potatoes and carrots and mix.
Bring to the boil and simmer for 30 minutes. When vegetables are soft liquidize.
Serve with sprinkle of mixed herbs on top.
