Pre- heat broiler and adjust the rack so it's 6" away from heat. |

Fill a medium pot with water and add a generous amount of salt, bring to boil. |

Wash the zucchini and cut into strips about 3" long and 1/2" thick. |

Add zucchini to water and cook until barely tender (3-4 minutes). |

Drain zucchini and plunge into ice water to stop the cooking, then drain in a colander for about 2-3 minutes. |

Spray broiling pan with non-stick spray. Arrange zucchini on broiling pan in rows, close together, skin side down. |

Brush zucchini with melted butter and sprinkle parmesan cheese over the zucchini, try to get most of it covered. |

Place under broiler and cook until cheese is completely melted and well-browned. Takes about 15 minutes. Enjoy. |
