Mixed Vegetable Soup
An easy-made, low fat, low calorie and high fiber soup.
1/2 <span class="measurestring" title="head, medium (about 5-3/4" dia)">head medium</span> cabbage
1 medium carrot
1 <span class="measurestring" title="stalk large (11"-12" long)">stalk large</span> celery
1 large onion
3 <span class="measurestring" title="medium whole (2-3/5" dia)">medium whole</span> tomatoes
4 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
Boil a pot of water.
Cut all the ingredients in slices.
Put all the ingredients into the boiling water.
Serve when all the vegetables become soft and cooked. Add vegetarian stock or salt to taste.
Note: this is a soup to eat whenever you feel hungry and you can add other vegetables you like.
