Mediterranean Shrimp and Scallop Stir-Fry
Light, crisp, fresh and quick stir fry. Perfect with a small salad.

2 tbsps olive oil
1 fl oz lemon juice
1/4 cup cubed eggplant
2 cloves garlic, crushed
1/4 cup pieces or slices mushrooms
1 tbsp green onions, chopped
1/4 cup chopped zucchini
1/4 cup chopped red peppers
Heat oil in skillet over medium-high heat.
Sauté vegetables for 3-4 minutes.
Add thawed shrimp and scallops and sauté for an additional 2-3 minutes.
Add garlic and green onions for the last minute.
Stir in lemon juice before serving.
