Meatballs and Mushroom Soup
Turkey meatball soup with rice, mushrooms, potatoes and carrots.
1 lb ground turkey
3 <span class="measurestring" title="potato large (3" to 4-1/4" dia)">large</span> potatoes
1 lb oyster mushrooms
1 <span class="measurestring" title="small (5-1/2" long)">small</span> carrot
1/4 cup brown rice
1 tbsp butter
1 cup chopped spring onions
1/2 tsp dill
Create about 25 meatballs from ground turkey and add them to a 5 quart pot of boiling water.
After meatballs rise to the top, add brown rice, potatoes, carrots and spices.
Cook for around 40 minutes. In the meantime, brown chopped oyster mushrooms in butter and add to soup.
At the end add a cup of chopped spring onions and dill and turn off the stove. Let stand for 5 minutes and serve.
