Low Carb Crepes
Thin crepe like pancakes that are good for Atkins.
3 large egg
1 tbsp oil
1/2 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
1/3 cup stirred soy flour
Blend all ingredients till smooth.
Cover bottom of pan with non-stick spray or olive oil.
When pan is hot drizzle small amount of mixture around the pan until you have a pancake shape and very thin.
Lightly brown on both sides.
Layer between wax paper.
Use or store in refrigerator or freeze for future use.
