|1.||Clean all vegetables and slice leeks into 1" to 1/2" pieces. Chop broccoli and cauliflower. Finely chop garlic cloves.|
|2.||Heat olive oil and butter in a large stock pot, then saute leeks, garlic, broccoli, cauliflower and carrots for 10 minutes.|
|3.||Add chicken (or vegetable) broth, plus 2 cups of water to the pot. Add 1/2 cup each of sour cream and 1% milk. Puree soup with a blender or mixer and salt and pepper to taste. Enjoy!!!|
|4.||Bring to a boil, then simmer for 45 minutes.|
