Indian Dhal (Lentils)
Healthy and delicious Indian inspired dhal.

1 cup red lentils
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, chopped
2 cloves garlic, crushed
2 tsps cumin seeds
2 tsps turmeric
10 medium mushrooms, chopped
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> green sweet peppers
4 <span class="measurestring" title="cup (8 fl oz)">cups</span> chicken stock
1 tsp olive oil
1 tsp curry powder
Cover lentils with boiling water and allow to stand for 15 minutes.
Heat olive oil in a pan and cook onions and garlic for 2 minutes.
Add cumin seeds, turmeric and curry powder. Cook for 2 minutes until fragrant.
Add mushrooms and green pepper. Stirfry for a further 2 minutes.
Add stock and lentils. Cook over medium heat for 35-45 minutes, or until dhal thickens.
Stir frequently to avoid sticking.
