A tender microwave cauliflower with a tangy, cheesy topping.
16 oz cauliflower
1/2 cup shredded cheddar cheese
1/4 cup no carb mayonnaise
1 tbsp apple cider vinegar
2 tbsps red onion, chopped
1 tsp yellow mustard
Break cauliflower into large pieces. In a shallow microwave safe dish, place cauliflower in a single layer.
Add 2 tablespoons of water. Cover with plastic wrap and cook on high in microwave for 4 minutes.
While cauliflower is cooking, mix no carb mayonnaise, mustard, chopped red onion, and cheese in a small bowl.
Uncover bowl carefully and drain water. Sprinkle cauliflower with vinegar.
Smooth cheese mixture on top of cauliflower and cook uncovered for an additional 3 minutes or until tender.
