1. | Place 1 cup of dry beans in large pot and add 6 cups of water. |
2. | Dice onion and add to the pot. Put over medium heat for 3 hours. |
3. | When beans are near done, dice Canadian bacon, garlic and sauté in olive oil in a large skillet. |
4. | Once garlic and bacon start to brown, add remaining ingredients and stir fry until tomatoes start to break down. |
