Fathead Pepperoni Alfredo Pizza

  1. Place half the mozzarella and cream cheese into a microwave safe bowl and heat for 1 minute on high.
  2. Remove bowl from microwave and stir well. Return bowl to the microwave and heat 30 more seconds.
  3. Remove bowl from microwave and put in almond flour, egg, and garlic and stir until all ingredients are combine.
  4. Line a pizza pan with foil and give it a light coating of cooking spray.
  5. Press dough into the pan distributing the crust evenly and bake at 425 °F (220 °C) for 6 minutes on the center of the oven rack.
  6. Remove crust from oven and fork wholes into any part of the crust that may have bubbled. Top the crust with the remaining ingredients.
  7. Turn oven on to broil and put the pizza back in the oven on the top shelf of the oven and broil the topping approximately 2 minutes or until it reaches your desired brownness.
