Eggplant Mini Pizzas
If you are missing pizza, this one is for you.
||Preheat oven to 400 °F (200 °C).
||Peel eggplant and cut into about 1/2" thick rounds.
||Brush both sides of eggplant with olive oil and sprinkle with salt, pepper, and garlic powder.
||Put eggplant slice in oven for 7 minutes or until browned and tender.
||Top eggplant with pasta sauce (sugar free if available) and mozzarella cheese (and any other topping you might like that is diet friendly).
||Continue to bake eggplant pizzas until the cheese is melted. Serve.
||Note: good for South Beach Phase 1.
