Fresh colorful salad with lots of protein from edamame (soy beans).
1 lb edamame
1/2 cup cherry cherry tomatoes, halved
1 cup parsley, minced
3/4 cup chopped red cabbage
3 tbsps black olives, coarsely chopped
1 clove garlic, finely minced
1/2 cucumber, diced
1 lime yields lime juice
2 tbsps olive oil
1 dash salt
1 dash pepper
Cook edamame according to package directions.
Allow to cool.
Meanwhile, prepare other vegetables and mix with cooled edamame in a large bowl with olive oil, lime juice, garlic, salt and pepper.
Chill and serve.
