||Peel cucumbers and slice very thin.
||Pour a lot of salt over cucumbers and place cucumbers in a bowl with a lid and put in the fridge for an hour.
||Drain all the water from bowl and squeeze cucumbers with paper towels until most of the water is gone.
||Add red wine vinegar, sour cream and sprinkle with salt. Mix well.
||Add chopped onion (purple if available) in and mix.
||Place back in fridge to chill.
||Serve and enjoy!
