Mix garlic powder, onion powder, oregano, paprika, black pepper, cayenne and salt. This creates the Cajun spice. |

Chop tomato, set aside. Chop peppers, onion and mince garlic. Cut chicken into bite size pieces. |

Add butter and olive oil to heavy skillet over medium-high heat. Sprinkle chicken liberally with Cajun spice. |

Add half of chicken and cook 2 minutes letting chicken sit, do not stir. Turn and cook the other side 2 minutes. Remove to a plate and repeat with remaining chicken, then adding to plate. |

Add peppers and onion and cook until they get a little color on them, 4 to 5 minutes. |

Add tomatoes and garlic cook 2 to 3 minutes. Remove veggies to a plate. |

Add chicken stock and cook until it reduces a little. Add heavy cream and stir to combine. |

Add chicken and veggies back to skillet stirring to combine. |
