Country Chicken Casserole
A quick and easy one dish casserole with chicken and stuffing.
1 <span class="measurestring" title="can (10.75 oz)">can</span> cream of celery soup
1 <span class="measurestring" title="can (10.75 oz)">can</span> cream of potato soup
1 cup reduced fat milk
1/4 tsp thyme
0.12 tsp black pepper
1 <span class="measurestring" title="package (10 oz)">package</span> frozen mixed vegetables
2 cups canned chicken
1 1/2 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
4 tbsps light butter
4 cups moist type stuffing
Stir the soups, milk, thyme, black pepper, vegetables and chicken in a 13x9x2" shallow baking dish.
Heat the water and butter in a 2-qt saucepan over high heat to a boil.
Add the stuffing and stir lightly to coat.
Spoon the stuffing over the chicken mixture.
Bake at 400 °F (200 °C) for 25 minutes or until hot.
