Cinnamon Apple Breakfast Quinoa
A combo of homemade applesauce and quinoa.
1/2 cup uncooked quinoa
1 tbsp clover honey
2 tsps cinnamon
2 <span class="measurestring" title="large (3-1/4" dia) (approx 2 per lb)">large</span> apples
1 1/2 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
Peel and core both apples. Chop them into bite-sized pieces.
Add quinoa, water and apples to a saucepan. Bring to a boil, cover and reduce to simmer for 25-30 minutes. The apples will be soft and the quinoa will have absorbed the water.
Stir in cinnamon and honey.
Sprinkle each individual serving with additional cinnamon (if desired).
