Chunky Vegetable Hash
This hash will get your breakfast started right.
1 tsp paprika
1 tsp leaves dried thyme
0.12 tsp salt
1 tbsp extra virgin olive oil
1 tsp garlic, diced
4 small mushrooms, chopped roughly
1 lb onion
2 small zucchini
1 cup chopped red bell pepper, diced
In a large skillet, heat oil over medium-high heat.
Add onion, thyme, and paprika, reduce heat to medium-low, and cook, stirring occasionally, 7 minutes, or until onion is softened.
Stir in salt, bell pepper, mushrooms, zucchini, and garlic.
Cover and cook, stirring occasionally, 4 minutes longer.
Remove from the heat and serve hash by itself or with a poached egg.
