Chopped Salad with Tuna
Simple tasty tuna salad that is good for South Beach Phase 1.
6 oz tuna fish
1/3 cup pared, chopped cucumbers
1/3 cup cherry tomato cherry
1/3 cup cubed avocados
1/3 cup chopped celery
1 cup shredded romaine lettuce
4 tsps extra virgin olive oil
2 wedges yield lime juice
2 cloves garlic, finely chopped
1/2 tsp black pepper
To make the salad, layer the tuna, avocados, cucumbers, cherry tomatoes, celery and romaine lettuce, in a bowl.
Separately to make the dressing mix the olive oil, fresh lime juice, finely chopped garlic and pepper.
Mix salad and dressing well together.
