Chili Con Carne Y Frijoles
Beef chili with lots of fiber and goodness.
4 tsp minced garlic
1/2 cup stewed tomatoes
2 tbsps tomato paste
1/4 tsp garlic salt
1 cup canned chili beans
3 tbsps vegetable oil
32 <span class="measurestring" title="oz, raw (yield after cooking)">oz raw</span> ground beef
1 <span class="measurestring" title="medium ear (6-3/4" to 7-1/2" long)">medium ear</span> corn
2 tbsps chili powder
1 1/2 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion
3 small green peppers
32 fl oz water
32 oz crushed tomatoes
2 cups kidney beans
Sauté chopped onion and minced garlic with oil until onions are soft and golden brown.
Add ground beef. Cook throughout.
Add chopped green peppers and chopped and seeded jalapeno pepper. Cook until soft.
Add corn (already boiled and off the ear).
Add crushed and stewed tomatoes and water. Add beans. Bring to boil.
Add seasonings, add and subtract based on personal preference.
Serve with sour cream, cheddar cheese, and/or chopped white onions.
