Chickpeas Corn and Red Pepper Salad
Delicious and healthy salad with a lovely texture suitable for all meals.
2 cups chickpeas
1 cup corn
1 cup chopped red pepper
2 tbsps chopped spring onions
1/4 cup coriander
1 tbsp olive oil
1 tbsp vinegar
1/2 tsp salt
1 dash pepper
Place rinsed corn and chickpeas in a bowl.
Add red pepper and onion diced finely.
Add coriander, salt, pepper, vinegar and olive oil. Toss well.
Note: optional to include canned 3 bean mix or parsley.
