Spray a non-stick pan with cooking spray. |

Add salt and pepper to both sides of chicken. Sear chicken on both sides and turn down heat. |

Add butter then the finely chopped shallots, garlic, and sun dried tomatoes (can have a coarser chop). |

Cook for a few minutes until lightly brown (be careful not to burn). Deglaze pan with the wine. |

Add chicken broth and heavy cream. |

Simmer for a few minutes. Sauce will thicken slightly. Serve with veggies, over pasta, or with rice. |
