Chicken with Sun Dried Tomato and Artichoke Sauce
A decadent creamy chicken dish that everyone will love.
||Spray a non-stick pan with cooking spray.
||Add salt and pepper to both sides of chicken. Sear chicken on both sides and turn down heat.
||Add butter then the finely chopped shallots, garlic, and sun dried tomatoes (can have a coarser chop).
||Cook for a few minutes until lightly brown (be careful not to burn). Deglaze pan with the wine.
||Add chicken broth and heavy cream.
||Simmer for a few minutes. Sauce will thicken slightly. Serve with veggies, over pasta, or with rice.
