Chicken Parmesan Florentine
A fast, easy, delicious, one dish casserole meal.
24 oz chicken breasts, chopped
2 cups spinach, chopped
2/3 cup milk
2 tbsps flour
10 tbsps french fried onions, chopped
1 tbsp butter
5 tsps Italian seasoning
1 1/3 cup parmesan cheese, shredded
Preheat oven to 350 °F (175 °C). Lightly spray the bottom of a 9x12 glass baking dish.
In a bowl mix parmesan and Italian seasoning.
Roll chicken in parmesan to coat and place pieces in one layer on bottom of baking dish.
Saute onions in butter for 1 minute. Add flour, stir.
Over medium heat add milk stirring with whisk to blend evenly. Continue stirring until sauce thickens slightly. Add spinach and blend thoroughly.
Spread spinach mixture in a layer over the chicken. Top with remaining parmesan.
Bake for 35-45 minutes until top begins to brown.
Remove from oven, let sit 5 minutes, before serving.
