Chicken Asparagus Soup
Flavorful and low in fat and calories, this is a great (and very filling) addition to any meal.
2 oz unsalted butter, light (2 tbsp)
4 <span class="measurestring" title="cup (8 fl oz)">cups</span> chicken broth
1 small onion, chopped
2 <span class="measurestring" title="can (300 x 407)">cans</span> asparagus pieces
0.2 cup flour
Melt butter over medium heat, then mix in flour. Add in diced onion and sauté for 3 minutes.
Add in both cans of asparagus pieces (without draining) and four cups of chicken broth. Let simmer for 20 minutes.
Ladle small portions of the soup into a blender and puree.
Add salt and pepper to taste.
Optional: to make the soup as your meal, add in a cup of heavy cream or half and half.
