Cheesy Chicken Enchiladas
Delicious chicken enchiladas with tortillas, sour cream and melted cheese.
1 cup sour cream
2 cups shredded mexican 4 cheese blend
6 oz chicken breast
10 flour tortillas
2 <span class="measurestring" title="can (10.75 oz)">cans</span> cream of chicken soup
2 margarine sticks
1 cup chopped onion
Combine chicken, cream of chicken soup, sour cream, butter, onion and 1 1/2 cups of cheese in a pan.
Cook until warm. Warm tortillas and then dip tortillas in enchiladas sauce to soften.
Spoon about 1/2 cup chicken mixture in each tortilla.
Roll up and place close together in 2 greased 9x13" pans (5 in each).
Cover with remaining shredded cheese.
Bake uncovered at 350 °F (175 °C) for 20 to 30 minutes.
