1 1/4 cups coconut sugar
3/4 cup 100% white whole wheat flour
1 large egg
1/2 cup salted butter
1/4 cup walnuts, chopped
2 oz carob powder
1 tsp vanilla extract
Mix melted butter, vanilla, and sugar.
Beat in egg, and add flour/carob powder alternately and gradually.
Mix in or top with chopped walnuts.
Lightly spray an 8x8" pan with cooking spray. Pour in batter.
Cook at 350 °F (175 °C) 20-25 minutes. Cool and enjoy.
Note: agave can be substituted for coconut sugar; add an additional 1/4 cup of flour to compensate for the extra liquid.
