2 tbsps olive oil
0.12 cup lemon juice
1/4 cup corriander, chopped
1 cup corn
2 <span class="measurestring" title="medium (4-1/8" long)">medium</span> spring onion, chopped
10 cherries tomatoes, quartered
1/2 cup chopped sweet red pepper
1 tsp packed brown sugar
15 g pumpkin seeds, coarsly chopped
30 g black beans, canned drained and rinsed
Mix all ingredients together and serve.
This salad will keep for a couple of days and gets more flavorful if you let it marinate in the refrigerator for awhile.
